The holidays are here and they wouldn't be complete without cranberry sauce! Most cranberry sauces from the store are LOADED with fake sugar and preservatives. Almost every can I saw in a store had high fructose corn syrup, some had aspartame. I was pretty disappointed at the ingredients I was reading on most of them. I decided to make my own for the upcoming holiday that wouldn't put a dent into my diet and one that was all natural!
What you need:
2 12 oz bag of organic cranberries
1/4 cup organic cane sugar or coconut sugar
1 tablespoon cinnamon
2 teaspoon each of nutmeg and all spice
I took a sauce pan and poured 1/4 cup water in it. I added 1 bag of the cranberries and 1/4 of the second bag into the pan. I peeled the clementine and placed the chunks of peel in the sauce pan with the cranberries, next you eat the clementine, no use in wasting a good fruit! Sprinkle the sugar and cinnamon over the pan and stir things around. Place the lid on the pan and keep the heat low. Set a timer for 10 minutes. By this time, the cranberries should have burst and became a slightly thick sauce. Add about 1/4 cup of water again and the rest of the cranberries. Add your nutmeg and all spice seasoning. Cover with lid again until the recently added cranberries become soft but do not burst. Turn off heat and set aside with lid still on for 7 minutes or until the cranberry sauce has thickened.
